I like cooking, quite a bit. It makes me feel happy/helps me destress/is fun. It’s certainly one of the things I look forward to most for when I’m living on my own.
Since being in Scotland, I haven’t been actually cooking as much as I would have liked to. In the beginning week, it was due to nerves about being in a new place and uncertainty of exactly how to use the new hob (stove) and other appliances.
But I braved it, and after being here a week, made myself a fun pasta dish, with tomato-basil sauce and chickpeas. It felt nice, and helped me feel more settled in.
Tonight, I decided I wanted to be a smidgen fancy.
So I made sourdough toast with avocado, hummus, black pepper, and cucumbers. A photo of the creation is below:

We don’t have a toaster in theĀ flat, so I made the toast on the hob in a pan, with a small dash of olive oil. It worked a lot better than I’d guessed it would. Which is nice to know. And the toast creations were pretty nice. I’ve only recently come to be willing to try avocado, and when I initially tried them (over the summer, maybe?) I thought “hm, these are okay”, but I’ve tried them a few more times since and I’ve begun to come around to really liking them, I think. Thus far, I don’t think I’d eat one by itself, but they are a nice addition to toast, or perhaps a rice dish, or a pasta.
I think some of my next goals for cooking is a rice dish (hopefully making tomorrow) with spinach and chickpeas, and maybe I’ll try a soup of some sort sometime soon. All I know is that when I’m in a new place I should remember that I do love cooking, and how fun and fulfilling it can be.
